Celebrating our 3rd wedding anniversary!

This week we are celebrating our 3rd year wedding anniversary. My husband loves pizzas, sandwiches, cakes, ice-creams, and other sweet treats. So, this is what I prepared for him!



Peanut Butter and Jelly Muffins

Artichokes, pesto, prosciutto, and arugula pizza


Boston Cream Pie


I made everything from scratch: two layers of cake, pasty cream, chocolate ganache


Artichokes, arugula, prosciutto, cheddar, parmesan pizza with chili oil


I served the Boston Cream Pie with sea salt, chocolate ganache, chocolate sorbet and sauce!


Whole Wheat Penne with Green Beans, Roasted Red Peppers, and Fresh Herbs Salad


Sour cream Coffecake Muffins with Pecans and Brown Sugar


Butter lettuce and avocado salad with herbed goat cheese scoop


Salmon-panko cakes over sage-rice with yogurt-chives aioli

When it is rhubarb season, I love to bake this rhubarb cake with pecans :)


Rhubarb cake is moist, nutty, sweet, and sour at the same time. Delicious!


Bibb Lettuc and Avocado Salad with Ciabatta bread and Herbed Goat Cheese

To make the cheese scoop, combine parsley, chives, salt, and pepper with goat cheese


If you add fresh lettuce leaves to the salmon cakes dinner, it becomes so much better!


Pork Chops with Fresh Tomatoes Pan Sauce over Casarecce with Parm Frico


The sauce is made with white wine. The acidity is balanced by the parmesan waffle!

My husband loved these cheesy muffins. I served them with soups and salads all week long!


The second time, I served the pork chop in a pasta bowl. All the juices were captured by the casarecce :)



I made mayonnaise from scratch and served potato wedges in a glass.


Our favorite pizza: roasted shallots, mushrooms, and prosciutto on a whole wheat crust.


Sugar snap peas risotto is the best ever. Sweet and crunchy, perfect complement to salty salmon cakes!


Plum preserves roll cake! The preserves were made by my grandparents few years ago...

I use my silicon mat to bake Mexican Chocolate Cookies


These cookies have cinnamon, black and red pepper in them!


A perfect afternoon snack: 2 cookies and a cup of cappuccino.


Sweet corn and summer squash soup. A velvety delight.


Sweet corn soup is great with goat cheese muffins!


Make your own pizza night. Mine is fresh tomato, mozza, feta, kalamata, chicken, basil!


His pizza is tomato sauce, homemade pork chorizo, parm, and cheddar cheeses!

A feast for an important event: graduation time!

This past week was the PhD defense of my friend. She stayed at our home for 5 days and I prepared all different menus for breakfast, lunch, and dinner. I made a delicious cake to celebrate this important event!


Roasted Garlic Stuffed Chicken, Beet Gnocchi, Fried Sage


Graduation breakfast: Whole Wheat homemade bread, soft-boiled eggs, goat cheese

Peanut Butter and Jelly are added for an American twist

Saffron aioli and slices of cheese are added for a Spanish twist


Strawberry and Banana "Licuado" is added for a Mexican twist


Orecchiette with Homemade Lamb Sausage, Goat Cheese, Fresh Corn


Boston Cream Pie with Homemade Chocolate Sorbet, Hazelnuts



The filling of the Boston Cream Pie is amazing!
 
The chocolate sorbet is so silky and soft.

The fennel fronds are used for a centerpiece. Nothing goes to waste in my kitchen.

I used special graduation napkins for the Defense Party!


I made a delicious Boston Cream Pie covered with chocolate frosting

I put "Congrats" on the top, to celebrate the Defense of my friend!



I served dinner and a whole ciabatta loaf. It was super tasty!
