Banana-Chocolate-Walnut Bread


Based on a recipe from Cooking Light magazine.
Ingredients:

1) 1 1/2 cups mashed ripe banana (about 4 small)
2) 1/3 cup plain fat-free yogurt
3) 5 tablespoons butter, melted
4) 2 large eggs
5) 1/3 cup (60 grams) granulated sugar
6) 1/3 cup (60 grams) packed light brown sugar
7) 1 1/2 cups (180 grams) all-purpose flour or pastry flour, if available
8) 1/4 cup ground flaxseed
9) 3/4 teaspoon baking soda
10) 1/4 teaspoon salt
11) 1/2 tsp ground cinnamon
12) 1/8 tsp ground allspice
13) 1/3 cup dark chocolate minichips (60% cocoa)
14) 1/3 cup chopped walnuts, toasted
15) Canola (or other vegetable) oil

Preparation:

1) Preheat oven to 350 F (or 180 C).


2) Combine first 4 ingredients. Beat with a mixer at medium speed. Add 2 sugars and beat again.


3) Combine flour and next 5 ingredients. Add to banana mixture. Beat just until blended (do not overbeat).

4) Fold in chips and walnuts. Pour into 9x5-inch loaf pan coated with oil. Bake for 50-55 min.

5) Remove from oven and cool in pan 10 min. Remove from pan and cool completely on a rack. Slice.

Yield: about 16 slices
