Blueberry jelly-roll cake

Blueberry jelly roll cake

Every night, we eat a small size dessert. I try to have a variety of staples. The jelly-roll cake is one of our favorites. Sometimes, I fill it strawberry jelly, sometimes with blueberry. Either way, the airy and soft cake is delicious!!! To serve it, I prepared home-made lemon curd and plated it in a professional way: on the bottom of the plate, a spoonful of curd, on top a slice of cake; on the top strained greek yogurt and powdered sugar.

Gravlax sandwich on pecan bread

Gravlax sandwich on pecan bread

On Saturdays, we like to have a relaxing brunch. I decided to use my home-made gravlax in different applications. This sandwich is out-of-this-world delicious! My own pecan bread, topped with neufchatel cheese, romaine lettuce, tomato and cucumber slices. The best part is, of course, the cured salmon. The lemon brings out the freshness of all the ingredients. We paired it with a crispy white wine, delish :)

Potato-beet gnocchi and stuffed chicken

Potato-beet gnocchi and garlic stuffed chicken

After this dinner, I was doing my "happy dance". I hand-made the potato-beet gnocchi and they were sweet, tender, and so different from the traditional ones. I served them as a side dish for my chicken stuffed with roasted garlic and feta cheese. The cheese and garlic keep the chicken so moist and flavorful :) I make it often, sometimes served in a classic rounded plate, sometime in a fancy squared one...

Mushroom duxelles ravioli

Mushroom duxelles ravioli

I make fresh pasta very often. This time I decided to make ravioli and to fill them with mushroom duxelles, a French classic, which I was served in the Marriott Hotel's Restaurant in Cannes, France. The shallots and mushroom paste is so tasty, that when you bite one of these treasures, you are almost in heaven. I serve them with Parmesan-bechamel sauce, which is very velvety and creamy.

Asparagus Cream Soup

Asparagus Cream Soup

For a cold day, nothing beats a warm creamy soup. This one is very elegant and tasty, the asparagus spears are vibrant green and the perfect decoration. Feta biscuit pairs perfectly, since the soup is slightly on the sweet side.

Feta cheese biscuits

My favorite biscuits! I LOVE feta cheese, maybe because it was present in my daily meals when I was a child. Nevertheless, these flaky, buttery, and salty biscuits are mouthwatering. We eat them often with creamy soups, but they are also good by themselves!!!

Salmon Gravlax pizza with neufchatel cheese and capers

I made my first homemade salmon gravlax and it was the best thing I have ever made. My husband loved it and I created so many dishes based on it. Here, a homemade pizza dough is topped with neufchatel cheese, thinly sliced gravlax, dill, and capers. A drizzle of organic extra-virgin olive oil and the "WOW" effect is immediate :)
